A book series you wish had gone on longer or a book series you wish would just freaking end already (or both):

The Pliocene Saga by Julian May.  What a fabulous world she created. I'd like to have seen the 'rest of the story' told.

And Dune should never have gone beyond the first book.  Well, more would have been nice if only they'd been decent.

Agreed on both. For the first, I was bitterly disappointed that the later books in the series were all prequels. To start with, I'd have liked to see some challenge to the neat "happily ever after" ending.

As for "Dune", I might make an exception for "Dune Messiah", but he should have stopped there.
